Absolutely love the Brussels sprouts recipe. Think I would leave out the alcohol. Add as a garnish when served.

You are so right. Well prepared eggs and champagne -or a good Chardonnay- will always make a good combination.

You had me until the trash can. Brussels sprouts and bacon go well together. Or even sprouts roasted in bacon grease. Our 3 and 4 year old boys agree: crispy, caramelized Brussels sprouts are delicious.

The section regarding Bishop Chow is convoluted to the point of being incomprehensible to a reader without in-depth understanding about current Catholic-China intrigues. Is Bp. Chow appointed by and suspected of being loyal to Beijing, or the other way around? I cannot figure out from the the text. Why would he potentially be snubbed for Cardinal? Because he is too loyal to Beijing or because he is adverserial to Beijing - or is it simply because everyone would rather not talk about China at all? Even the Pillar text seems to be be walking on egg shells here.

Mr. Condon, are you aware that within the last fifteen-odd years, the brussel sprouts that have been commercially available are from cultivars that have been bred to express significantly lower levels of glucosinolates, the chemical responsible for the disgusting bitterness? I myself have not yet attempted to prepare such products of traditional plant breeding techniques, but I have heard good things from those who have.
